5 Awesome Chocolate Chip Cookie Recipes for Paleo, Vegan, Low-Fat and Gluten-Free Diets!

Chocolate Chip Cookies are the classic American favorite. Kids are raised eating them and adults sneak them in when they can. They’re left out for Santa and served at every school function and birthday parties. Chocolate Chip cookies have all sorts of variations on them and everyone will tout their own as the best, but here are 5 of the actual best for many different diets.
For each recipe, preheat the oven to the specified time (it’s different for each kind of cookie) simply mix the dry and wet ingredients separately, and then mix together. Shape into balls or drop onto a non-stick cookie sheet and bake at the specified time. These all make 24 cookies.

5 Paleo Recipe

Dry Ingredients: 2 C. almond meal ¼ tsp. salt ? tsp. teaspoon baking soda ¼ C. dark chocolate chips (add last, after wet ingredients) Wet Ingredients: 3 T. melted coconut oil 2 T. honey 1 T. vanilla 1 T. almond milk Preheat oven to 350 degrees. Follow directions above and then bake for 8-10 minutes. After 2 minutes of cooling, transfer to wire racks to cool completely.

4 Vegan Recipe

Dry Ingredients: 2 ½ C. unbleached all-purpose flour ¾ C. brown sugar, firmly packed ¾ C. granulated sugar 1 tsp. baking soda 1 tsp. salt 1 C. chocolate chips (add last, after wet ingredients) Wet Ingredients: 1 C. butter 2 tsp. vanilla 3 eggs Preheat oven to 375 degrees. Follow directions above and then bake for 8-10 minutes. After 2 minutes of cooling, transfer to wire racks to cool completely.

3 Low-Fat Recipe

Dry Ingredients: 1 C. cane sugar 1 C. brown sugar 1 C. whole wheat pastry flour 1 C. unbleached all-purpose flour ½ tsp. baking soda ½ tsp. salt 1 C. dark chocolate chips (add last, after wet ingredients) Wet Ingredients: 2 T. butter (non-hydrogenated, nondairy is interchangeable), melted 1 egg white 2 T. applesauce 1 tsp. Vanilla Preheat oven to 350 degrees. Follow directions above and then bake for 8-10 minutes. After 5 minutes of cooling, transfer to wire racks to cool completely.

2 Gluten-free Recipe

Dry Ingredients: 1/2 C. packed brown sugar 1/4 C. cane sugar 1/2 tsp. baking soda 1/2 tsp. salt 1 C. gluten-free oat flour 1 ¼ C. cup Bob’s Red Mill Almond Flour 1/4 tsp. cinnamon 1/2 C. dark chocolate chips (add last, after wet ingredients) Wet Ingredients: 7 T. nonhydrogenated nondairy butter 1 flax egg: (1 T. ground flax mixed with 3 T. water) 1 tsp. vanilla Preheat oven to 350 degrees. Follow directions above and then bake for 8-10 minutes. After 5 minutes of cooling, transfer to wire racks to cool completely.

1 Regular Recipe

Dry Ingredients: ½ tsp corn starch 2 ½ C. unbleached all-purpose flour ¾ C. brown sugar, firmly packed ¾ C. granulated sugar 1 tsp. baking soda 1 tsp. salt 1 C. chocolate chips (add last, after wet ingredients) Wet Ingredients: 1 C. non-hydrogenated nondairy butter 2 tsp. vanilla 4 T. water Preheat oven to 375 degrees. Follow directions above and then bake for 8-10 minutes. After 2 minutes of cooling, transfer to wire racks to cool completely.
